8 ounce block of feta cheese, cubed
4-6 sprigs of fresh oregano
2 sprigs of fresh rosemary
2 springs of fresh thyme
½ teaspoon peppercorns
2 cloves of garlic, smashed
Chili pepper ﬂakes (to taste)
1 cup of extra virgin olive oil
- Gently warm extra virgin olive oil with aromatics and spices to coax out the ﬂavors.
- Let the olive oil mixture cool before adding it to the cheese. Pour the warmed mixture over cubed cheese in a wide mouth container. Make sure that the cheese is completely covered.
- Leave it on your counter for 3-4 hours to let the ﬂavors meld. If you don’t consume it immediately, store it in your refrigerator and bring to room temperature before enjoying.
