French Baguette (preferably whole grain)

1 tablespoon extra virgin olive oil

1.5 cups of Ricotta

1.5 cups of assorted fruit

Fresh herbs of your choice

Salt and pepper to taste

  1. Slice baguette into 1 inch slices
  2. If using berries, mash with fruit. If using firmer fruits like peaches, mangos or apricots, simply slice.
  3. Brush each slice with a bit of olive oil
  4. Broil baguette slices until crispy, then let cool
  5. Top each piece of baguette with a tablespoon of ricotta, and a spoonful or slice of fruit of your choice.
  6. Finish with fresh herbs and salt and pepper to taste (note: we used a rosemary salt and it was delicious!)
