Ingredients
French Baguette (preferably whole grain)
1 tablespoon extra virgin olive oil
1.5 cups of Ricotta
1.5 cups of assorted fruit
Fresh herbs of your choice
Salt and pepper to taste
Instructions
- Slice baguette into 1 inch slices
- If using berries, mash with fruit. If using firmer fruits like peaches, mangos or apricots, simply slice.
- Brush each slice with a bit of olive oil
- Broil baguette slices until crispy, then let cool
- Top each piece of baguette with a tablespoon of ricotta, and a spoonful or slice of fruit of your choice.
- Finish with fresh herbs and salt and pepper to taste (note: we used a rosemary salt and it was delicious!)
