Dips and spreads are easy and delicious additions to any appetizer table, tailgate party or light lunch. One reason they are so popular in the United States is that they can be adapted to any cuisine using regional ingredients. The cuisines of all the Mediterranean countries are ripe with recipes that use dips as a base; soft cheeses, hummus, tzatziki, tahini and babaganoush  are all examples. Eaten plain or with extra ingredients such as garlic or vegetables, they have become Mediterranean kitchen staples. Try the following recipe, and perhaps it will also become a kitchen staple for you. Tzatziki Chicken Salad *Serves 8* Ingredients:
  • 3 cups grilled chicken, chopped
  • 1 red pepper, minced
  • 1 cucumber, minced
  • 1 small onion, minced
  • ¾ cup tzatziki
  • Juice of 1 Lemon
  • Ground black pepper
  • Pita Chips
Preparation:
  1. In a large bowl, combine chicken, red pepper and onion. Stir it together until they are well-combined.
  2. Add the cucumber, tzatziki and lemon juice. Stir the mixture gently until the ingredients are coated with tzatziki. Add black pepper to taste and serve with pita chips for dipping.
