1 tablespoon fresh lemon juice
1 boneless, skinless chicken breast
Salt and pepper, to taste
1 whole grain pita
2 lettuce leaves
5 or 6 cucumber slices
2 tablespoons diced tomato pieces
1 tablespoon parsley, chopped
2 tablespoons sprouts
1 tablespoon tahini (optional)
- Squeeze lemon juice on chicken breast and season with salt and pepper. Rub thoroughly. Grill at medium-high heat for about 10 to 15 minutes until fully cooked. Set aside to cool, then slice chicken breast into strips.
- Cut pita in half. Assemble sandwich by opening the pocket of each half and ﬁlling with lettuce, chicken, cucumber slices, diced tomato pieces, parsley, and sprouts.
- Finish with a drizzle of tahini if desired.
