2 tablespoons hummus
2 tablespoons plain Greek yogurt
1 ½ tablespoons fresh lemon juice
1 cup shredded cooked rotisserie chicken
½ shallot, minced
2 tablespoons crumbled feta cheese
2 small tomatoes, chopped
4 olives, sliced
4 butter lettuce leaves, cup-shaped for ﬁlling
Fresh dill and parsley, chopped, to taste
In a medium bowl, mix hummus with Greek yogurt and season with lemon juice to taste. Toss with shredded chicken, shallot, feta, tomato, and sliced olives. Spoon into lettuce cups. Sprinkle with chopped fresh dill and parsley.
