1 lb. shrimp, peeled and deveined
1 cup roasted red tomatoes, drained (2 tablespoons marinade reserved)
½ cup chopped parsley
1 teaspoon freshly ground pepper
2 tablespoons lemon juice
1 cup crumbled feta cheese
- Preheat the oven to 450°F.
- In a large casserole dish combine the shrimp, roasted tomatoes with marinade, parsley, and pepper.
- Roast in the oven for 10 minutes, then remove from the oven and add the lemon juice.
- Stir, sprinkle the feta cheese over the top, and continue roasting for another 5 minutes, until the shrimp are just cooked through and the mixture is hot and bubbly.
