Tomato and Shrimp Casserole


This delicious appetizer is very easy to make. For a special dinner, use four small individual crocks rather than one large baking dish.

Ingredients


1 lb. shrimp, peeled and deveined

1 cup roasted red tomatoes, drained (2 tablespoons marinade reserved)

½ cup chopped parsley

1 teaspoon freshly ground pepper

2 tablespoons lemon juice

1 cup crumbled feta cheese

Instructions


  1. Preheat the oven to 450°F.
  2. In a large casserole dish combine the shrimp, roasted tomatoes with marinade, parsley, and pepper.
  3. Roast in the oven for 10 minutes, then remove from the oven and add the lemon juice.
  4. Stir, sprinkle the feta cheese over the top, and continue roasting for another 5 minutes, until the shrimp are just cooked through and the mixture is hot and bubbly.
