Tomato Pie with Le Gruyère AOP

Ingredients

Baked pie crust (preferably whole grain)

Four large or five small, peeled Roma tomatoes

1/2 cup green onions

8 Basil leaves

Salt and pepper, to taste

1/4 cup nonfat Greek yogurt

1/4 cup mayonnaise

1 cup grated Le Gruyère AOP

Instructions

  1. Preheat the oven to 350 degrees F.
  2. In a medium bowl, combine the yogurt, mayonnaise, and grated Le Gruyère AOP, and set aside.
  3. Slice peeled tomatoes and layer them evenly in the baked pie crust.
  4. On top of the tomatoes, layer the basil, chopped green onions, and some salt and pepper.
  5. Top the pie with the cheese mixture, spreading evenly.
  6. Bake the pie for 35-40 minutes or until golden brown.
