Ingredients

1 cup whole wheat pasta, uncooked

4 teaspoons olive oil

8 eggs

2 cups mixed greens

2 medium avocados

8 cherry tomatoes

Turmeric, to taste

Paprika, to taste

Oregano, to taste

Dill, to taste

Salt, to taste

Instructions
  1. Cook pasta according to package directions, then transfer to a pan sprayed with olive oil.
  2. Crack eggs over the pasta. Season with turmeric, paprika, oregano, dill weed and salt, and fry sunny-side up.
  3. Transfer pasta with eggs to a plate with ½ avocado, sprinkled with turmeric, paprika, salt, and cherry tomatoes.

Hello, I think something is missing? How do u fry eggs when they are already placed atop the pasta?

Hi Jen, since the pasta will be hot and transferred to a pan before adding the eggs, this should work fine. Let us know how it goes!

Don’t understand the recipe....cook egg on top of already cooked pasta Please clarify

It may be helpful to only cook two eggs at a time with 1/4 cup of the pasta, and make space for them on the pan. If you find it easier to fry the eggs separately that works too! Let us know how it goes.
