Ingredients

2 pkg. (10 ounces each) frozen, chopped spinach

6 tablespoons extra-virgin olive oil

2 garlic cloves, thinly sliced

1 cup coarse whole grain bread crumbs

½ cup raisins, soaked for 5 minutes in hot water

Salt and freshly ground pepper to taste

½ cup grated Parmigiano Reggiano cheese

Instructions
  1. Put the frozen spinach in a bowl and microwave for about 5 minutes, or until thawed. Transfer to a strainer and using your hands, squeeze out as much excess moisture as possible.
  2. Heat 2 tablespoons of the olive oil over medium heat. Add the garlic and sauté until soft, about 4 minutes. Add the spinach and raisins, stir, and cook for a minute or two. Sprinkle on the bread crumbs, toss to blend, and add the remaining 4 tablespoons of olive oil. Cook for several minutes to heat through.
  3. Season with salt and pepper and cook for 1 minute longer. Add the cheese, toss, and serve hot.

Hi Marilyn, "Parmigiano Reggiano" is the full name of what people may more commonly call "Parmesan" cheese. It refers to the Reggio Emilia province in Italy, where the cheese originates (Parmigiano = Parma province). In fact, technically, only cheeses produced in that area and that meet certain requirements can be called Parmigiano Reggiano.
