Ingredients
2 pkg. (10 ounces each) frozen, chopped spinach
6 tablespoons extra-virgin olive oil
2 garlic cloves, thinly sliced
1 cup coarse whole grain bread crumbs
½ cup raisins, soaked for 5 minutes in hot water
Salt and freshly ground pepper to taste
½ cup grated Parmigiano Reggiano cheese
Instructions
- Put the frozen spinach in a bowl and microwave for about 5 minutes, or until thawed. Transfer to a strainer and using your hands, squeeze out as much excess moisture as possible.
- Heat 2 tablespoons of the olive oil over medium heat. Add the garlic and sauté until soft, about 4 minutes. Add the spinach and raisins, stir, and cook for a minute or two. Sprinkle on the bread crumbs, toss to blend, and add the remaining 4 tablespoons of olive oil. Cook for several minutes to heat through.
- Season with salt and pepper and cook for 1 minute longer. Add the cheese, toss, and serve hot.
