1 cup farro
¼ cup olives, halved
⅓ cup chopped sundried tomatoes
4 oz Parmigiano-Reggiano cheese
Serve with Spicy Salmon
¼ cup plain, Greek-style yogurt
2 tablespoons fresh dill
2 cloves garlic, minced
2 tablespoons lemon juice
2 tablespoons water
- Prepare farro according to package instructions.
- While the farro is cooking, mix all dressing ingredients in a small bowl until well combined.
- In a large bowl, toss the cooked farro with the dressing and the remaining salad ingredients. Serve with spicy salmon.
