1 pound fresh fava beans or broad beans
4 ounces lean bacon, chopped
1 sprig savory
8 cups water
4 tablespoons butter
1 cup toasted croutons, preferably whole grain
1. Place the fava beans, bacon, savory, and water in a large soup pot.
2. Bring to a boil, decrease the heat to low, and cook for 1 hour, or until the beans are al dente.
3. Strain the soup through a ﬁne mesh sieve, or puree in a blender or with an immersion blender.
4. Serve the soup in four bowls, topping each with a pat of butter.
