Black Beans & Brown Rice

A staple pair throughout the African diaspora, beans-and-rice can be enjoyed separately or together to round out any meal. Time saving tip: prepare extra brown rice and store the leftovers in the refrigerator or freezer for another meal.

Ingredients

4 cups water

2 cups uncooked brown rice

1 (20-ounce) can of no-salt black beans

3 cloves garlic, minced

Instructions

  1. Bring the water and rice to boil in a medium pan or pot. Simmer for 35-40 minutes covered, or until the water is absorbed, and the rice is tender and cooked through.
  2. When the rice is close to finished, in a medium pan, cook the black beans along with their liquid and the garlic on medium-high heat for 5-6 minutes.
  3. Combine the rice and beans together, and serve. Garnish as you wish!
