Spinach with Raisins

Keep frozen spinach on hand so you can always make this tasty dish in-between shopping trips for fresh produce. Use either light or dark raisins.

Prep Time:

15 minutes

Yield:

4-6 Servings

Ingredients

2 pkg. (10 ounces each) frozen, chopped spinach

6 tablespoons extra-virgin olive oil

2 garlic cloves, thinly sliced

1 cup coarse whole grain bread crumbs

½ cup raisins, soaked for 5 minutes in hot water

Salt and freshly ground pepper to taste

½ cup grated Parmigiano Reggiano cheese

Instructions

  1. Put the frozen spinach in a bowl and microwave for about 5 minutes, or until thawed. Transfer to a strainer and using your hands, squeeze out as much excess moisture as possible.
  2. Heat 2 tablespoons of the olive oil over medium heat. Add the garlic and sauté until soft, about 4 minutes. Add the spinach and raisins, stir, and cook for a minute or two. Sprinkle on the bread crumbs, toss to blend, and add the remaining 4 tablespoons of olive oil. Cook for several minutes to heat through.
  3. Season with salt and pepper and cook for 1 minute longer. Add the cheese, toss, and serve hot.

How’d it Taste?

    what is reggiano

    • mmoore says:

Hi Marilyn, “Parmigiano Reggiano” is the full name of what people may more commonly call “Parmesan” cheese. It refers to the Reggio Emilia province in Italy, where the cheese originates (Parmigiano = Parma province). In fact, technically, only cheeses produced in that area and that meet certain requirements can be called Parmigiano Reggiano.
