Microwave Breakfast Hash

No time for breakfast? Try this simple microwave combination of eggs, hash browns and cheese for a quick and filling option. Top with sliced tomatoes and fresh herbs.

Ingredients

½ cup frozen, shredded hash browns

1 egg

2 tablespoons crumbled cheese, such as cheddar or feta 

Salt and pepper to taste

Instructions

  1. Coat an 8-ounce microwave-safe ramekin or small cereal bowl with olive oil cooking spray. Add potatoes. Microwave on high for one minute until hot. Season with salt and pepper. 
  2. Add egg and beat with a fork until blended. Microwave on high for 30 seconds. Stir. Microwave until the egg is almost set, 15 to 30 seconds longer.
  3. Top with cheese and enjoy!

    Also works with 1/3 C dehydrated hashbrowns & 1/3 C water – micro for 30/30, let sit 5 min. then add egg as directed and cheese. Easy to fix, add whole wheat toast and fruit on the side for a complete meal.

        Can you use fresh shredded potatoes? I don’t have frozen potatoes

          Hi Theresa,
          Thank you for your question! We wouldn’t recommend substituting fully raw shredded potatoes in this recipe, as most frozen hashbrowns are at least partially cooked already.

            You can take that raw potato and shred it into thin strips thinner than french fries put it in a bowl of water and par-boil it for at least 6 to 10 minutes to help remove starchiness. Then you can add it to the recipe as a substitute for Frozen shredded hash browns. It’s not quick, but it does the trick.
