1 medium head cauliﬂower
Salt and pepper to taste
- Heat the oven to 400°F.
- Wash the cauliﬂower, drain, and remove the thick stem. Chop into bite-sized pieces and arrange on a baking sheet. Drizzle with olive oil and season with salt and pepper.
- Roast for 10 minutes, turn with a spatula, and continue roasting for 10 more minutes, or until the ﬂorets are slightly browned and just starting to get soft.
