1 cup seeded and diced tomatoes
½ cup ﬁrmly packed minced fresh cilantro
1 cup ﬁnely chopped red bell pepper (optional)
1 small head green cabbage, ﬁnely shredded
½ cup freshly squeezed lime juice
Salt, to taste
- Mix the tomatoes, cilantro, and red pepper in a bowl.
- Add the cabbage and toss.
- Add the lime juice and salt to taste at the last minute before serving to avoid wilting of the cabbage.
