This simple summer salad combines the sweetness of watermelon, the saltiness of feta, and the nuttiness of quinoa into a refreshing side.
1 tablespoon honey
2 tablespoons olive oil
1 tablespoon fresh lemon or lime juice
1/2 teaspoon salt
3/4 cup very thinly sliced red onion
3/4 cup water
1/2 cup quinoa
4 cups cubed, seeded watermelon
1/2 cup crumbled feta cheese
1/4 cup chopped fresh basil or mint
