So quick and so delicious, this is a perfect meal for lunch or a light supper. Serve with a green salad.
3 whole eggs
3 egg whites
¼ cup grated Parmigiano Reggiano cheese
2 tablespoons diced fresh tarragon (or 2 teaspoons dried)
Salt and freshly ground pepper, to taste
3 tablespoons extra-virgin olive oil, divided
1 onion, diced
1 zucchini, diced
1 red or orange bell pepper, diced
