Turkish Grilled Chicken Kebabs

Marinating chicken in yogurt is a traditional Turkish technique for mastering juicy grilled chicken. Feel free to add red onions or other vegetables to the kebab skewers as well. Here, it is pictured atop a bulgur pilaf.

Ingredients

Ingredients for Marinade

1 cup plain yogurt

¼ cup extra virgin olive oil

Juice from ½ lemon (2 tablespoons)

2 garlic cloves, minced

1 teaspoon ground cumin

1 teaspoon salt

2 pounds chicken (skinless breast or thigh), cut into cubes

 

Ingredients for Kebab

4 bell peppers (any color), cut into squares

Skewers

Instructions

  1. Prepare marinade, mixing all the ingredients except the chicken
  2. Mix the chicken with the marinade and refrigerate for at least 2 hours and up to 24 hours
  3. After marinating, prepare the skewer by alternating chicken and peppers on the skewer
  4. Cook on the grill or under the broiler, 5-7 minutes per side.
