Smoked Salmon Appetizers

Apples and pumpkin seeds add a nice twist on this classic combination. Change it up even more by using pickled herring in place of salmon.

Ingredients

2 slices whole grain bread

2 tablespoons pumpkin seeds

2 small apples

lemon juice, to taste

1.5 ounces cream cheese

1/4 cup Greek yogurt

1 sprig fresh dill

2 ounces smoked salmon

Instructions

  1. Cut slices of bread in half. Roast bread and pumpkin seeds in a pan until crispy. 
  2. Wash the apples. Cut one apple into 8 thin segments and dice the other apple. Sprinkle apple pieces with lemon juice. 
  3. Combine cream cheese and Greek yogurt. Chop dill and fold it into this mixture along with the roasted pumpkin seeds and diced apple.
  4. Put one slice of smoked salmon on each piece of bread, spread on the cream cheese mix and decorate with dill and apple segments.
