Sirloin Ribbons


Use wooden skewers about 8 inches long for this quick-cooking recipe. Thread the meat by forming an S-shape (sort of like putting a worm on a hook), piercing it every two inches or so with the skewer.

Ingredients


1 pound sirloin steak

1 tablespoon extra-virgin olive oil

1 tablespoon wine vinegar

3 cloves garlic, mashed

2 teaspoons dried oregano

Instructions


  1. Slice the steak lengthwise into ¼-inch thick strips.
  2. Combine the olive oil, vinegar, garlic, and oregano in a flat baking dish and stir with a whisk to mix. Add the steak strips and toss with a fork to coat both sides with the mixture. Refrigerate for about 2 hours. 
  3. Heat a grill to 350°F or preheat the oven broiler. Thread several slices of meat onto each skewer.
  4. Arrange the skewers on the grill or in a broiler pan and cook for about 3 minutes per side, just until the meat is browned. Transfer the skewers to a serving platter.
