Cauliflower takes on a sweeter, caramelized flavor when roasted in the oven. This Indian-inspired recipe doesn’t require much oil and the results are absolutely delicious.

6 cups cauliflower, chopped into 1-inch florets
1 teaspoon ground cumin
1 tablespoon fresh ginger, peeled and grated
1⁄4 teaspoon ground turmeric
3⁄4 teaspoon salt
2 teaspoons ground coriander
½ teaspoon paprika
1⁄2 teaspoon cayenne pepper, or to taste
2 tablespoons canola oil
3 tablespoons water
2 teaspoons lemon juice
3 tablespoons cilantro, finely chopped
