We love the Mediterranean flavors in this cozy dish! In this one-pot wonder, the orzo pasta boils in a shallow amount of water alongside the veggies, no additional pots or pans necessary.
2 tablespoons olive oil
1 small red onion, chopped
2 garlic cloves, minced
1 red bell pepper, chopped
1 bunch kale leaves, chopped
2 teaspoons dried oregano
1/4 teaspoon red pepper flakes
½ teaspoon salt
3 tablespoons tomato paste
1 cup uncooked whole wheat orzo
1 (14-ounce) can diced fire roasted tomatoes, no-salt-added
1 (15-ounce) can chickpeas, no-salt-added
2 1/2 cups water
1/4 cup crumbled feta
2 tablespoons chopped fresh dill

Tasty, but have to continuously stir the pot after you add the orzo to keep the orzo from sticking to the bottom. It’s a work out!
This is not a budget friendly recipe when the nearest store that carries some of these ingredients is 2 hours away. Such as: Fire roasted tomatoes and whole wheat orzo.
I really wish you had some recipes I could reasonably make for 1 person living in a rural area.
