Broccoli becomes crispy when it is roasted. Before going in the oven, the florets in this recipe are flavored with olive oil and lemon to give them a tangy, heavenly kick. Sprinkle with red pepper flakes for a touch of spice.
2 heads broccoli, chopped into florets
1 lemon
1 tablespoon plus 1 teaspoon olive oil
1 clove garlic, minced
1/4 cup pine nuts
1 teaspoon lemon zest
1 teaspoon red pepper flakes
Salt and pepper to taste

I made this without the pine nuts and was stilll great. I added a bit more of olive oil and more lemon juice. It came out wonderful.
Yum! I am a Broccoli freak- although crispier & crunchier is nicer
