Cedar planks add an extra depth of flavor to these grilled fish gyros, but feel free to grill the fish in a grill pan, or to cook on the stovetop.

What is cedar plank
Grilling on a cedar plank (wooden board) is one way to infuse the grilled fish with extra flavor. If you can find one, look for a cedar plank made especially for grilling/cooking—but if you can’t find one, this dish will still be delicious without the plank to grill it on!
You can find them at some chain hardware type stores that sell bbq grills. They are also available at kitchen speciality stores.
Thanks, Gail!
