Tzatziki Sauce

A cool and refreshing mix of cucumbers and yogurt, the Greek sauce called tzatziki makes a great topping for a wide range of dishes, including the black bean bulgur burgers shown here.

Ingredients

¾ of a European cucumber

1 ¼ cups Greek yogurt

½ teaspoon salt

2 cloves garlic, minced

3-4 stalks green onions, chopped fine

1 tablespoon olive oil

Instructions

  1. Grate cucumber, spread on paper towels and squeeze excess moisture out.
  2. Mix all the ingredients in a bowl and chill. Keeps in refrigerator for 4-5 days.

There are really no set amounts to any of the ingredients in this recipe. Feel free to add more or less of anything, to get the balance of flavors you enjoy most.

Note: If you don’t have any Greek yogurt, you may use 1 ½ cups of plain low-fat yogurt that you’ve drained for at least an hour in a coffee filter placed in a strainer or a colander.
