¾ of a European cucumber
1 ¼ cups Greek yogurt
½ teaspoon salt
2 cloves garlic, minced
3-4 stalks green onions, chopped ﬁne
1 tablespoon olive oil
- Grate cucumber, spread on paper towels and squeeze excess moisture out.
- Mix all the ingredients in a bowl and chill. Keeps in refrigerator for 4-5 days.
There are really no set amounts to any of the ingredients in this recipe. Feel free to add more or less of anything, to get the balance of ﬂavors you enjoy most.
Note: If you don’t have any Greek yogurt, you may use 1 ½ cups of plain low-fat yogurt that you’ve drained for at least an hour in a coﬀee ﬁlter placed in a strainer or a colander.
