Greek-Style Gigante Beans

Look for bags of large white dried beans at any store that sells Mediterranean foods. Allow time to soak the beans for at least eight hours. And, once they’re cooked, freeze some for a meal down the road.

Ingredients

12 ounces dry gigante beans

1 (28-ounce) can diced tomatoes, no-salt-added

2 stalks celery, diced

1 onion, diced

4 garlic cloves, minced

1 ¼ teaspoons salt

Water as needed

Instructions

  1. Put the beans in a large bowl, cover with water, and soak for eight hours.

  2. Drain, rinse, and add to a slow cooker with the remaining ingredients. Stir, and add a little water to cover the beans completely with liquid.
  3. Cover, and cook for 8 to 10 hours on low, until the beans are soft. Taste and adjust seasoning. Enjoy hot, at room temperature, or cold.
