This soup uses fresh fava beans, or broad beans. These beans are in season in the spring. If you can’t find fresh fava beans, look for frozen fava beans in the grocery store and thaw them before beginning the recipe.
1 pound fresh fava beans or broad beans
4 ounces lean bacon, chopped
1 sprig savory
8 cups water
4 tablespoons butter
1 cup toasted croutons, preferably whole grain
1. Place the fava beans, bacon, savory, and water in a large soup pot.
2. Bring to a boil, decrease the heat to low, and cook for 1 hour, or until the beans are al dente.
3. Strain the soup through a fine mesh sieve, or puree in a blender or with an immersion blender.
4. Serve the soup in four bowls, topping each with a pat of butter.
