Here’s an easy and delicious way to assemble a lovely appetizer or light meal.
½ cup gigandes beans in vinaigrette
½ cup meze olive mix or mixed olives
½ cup green olives stuffed with garlic
4 red peppers stuffed with feta
½ cup hummus or bean dip
4 radishes, cut in halves
4 slices Graviera or other hard Greek cheese
Drain the beans, olives, and peppers and arrange on a platter with the cheese, radishes and hummus. Â
Note: Shop for olives, beans, and other antipasti ingredients prepared in vinaigrette and with added flavors such as pickled garlic, sweet red peppers, and caperberries.
