Mashed avocado is spiced up with balsamic glaze, baby arugula, cherry tomatoes, and crunchy toasted walnuts. A delicious breakfast or lunch that’s a great source of healthy fats!
2 slices whole grain bread
1/4 avocado
4 cherry tomatoes, sliced widthwise
1/3 cup baby arugula leaves
1/4 cup roughly chopped walnuts, toasted
1 teaspoon balsamic glaze
1/8 teaspoon salt
1/8 teaspoon pepper
