Ingredients
Juice of 4 lemons
½ watermelon (seeds removed, or seedless), pureed (about 4 cups)
3 tablespoons sugar
2 cups water
Mint leaves, for garnish
Instructions
- In a small pot, boil 1 cup of water with the sugar in order to dissolve it.
- Place the lemon juice and watermelon puree in a large, glass baking dish. Add the dissolved sugar into the dish, and then add the remaining cup of water.
- Mix it gently, but not in excess, and then freeze the mixture.
- After 3-4 hours, or just before serving, remove the mixture from the freezer and scratch it with a fork to produce a granita-like texture Serve by scooping into small bowls, then decorate each portion with a mint leaf.
