Watermelon Granita

Granita is a fun, refreshing treat for sunny Mediterranean days. Fruits like watermelon and lemon give this granita a natural, bright flavor.

Ingredients

Juice of 4 lemons

½ watermelon (seeds removed, or seedless), pureed (about 4 cups)

3 tablespoons sugar

2 cups water

Mint leaves, for garnish

Instructions

  1. In a small pot, boil 1 cup of water with the sugar in order to dissolve it.
  2. Place the lemon juice and watermelon puree in a large, glass baking dish. Add the dissolved sugar into the dish, and then add the remaining cup of water.
  3. Mix it gently, but not in excess, and then freeze the mixture.
  4. After 3-4 hours, or just before serving, remove the mixture from the freezer and scratch it with a fork to produce a granita-like texture Serve by scooping into small bowls, then decorate each portion with a mint leaf.
