8 whole grain pitas (or tortillas), warmed
½ cup hummus, divided
2 cups spinach, divided
16 baked falafel patties (1 batch of this recipe, made into 16 falafel patties), warmed
1 pint cherry tomatoes, halved, divided
1 small cucumber, diced,
½ small red onion, diced
- Spread each pita with about 1 tablespoon of hummus, ¼ cup spinach leaves, 2 falafel patties, and a large spoonful each of tomatoes, cucumber, and onions.
- Roll pita into a wrap shape before eating.
