Ingredients
4 cups of fresh or frozen okra
4 unpeeled garlic cloves
¼ cup olive oil
⅛ teaspoon salt
½ cup pomegranate molasses
1 cup pomegranate seeds
Optional: Coriander and cherry tomatoes for garnish
Instructions
- Preheat oven to 350.
- Put the okra in a tray with the garlic cloves, olive oil, salt, and spices.
- Bake in the oven for 10 minutes.
- Add the pomegranate molasses and pomegranate seeds, and mix.
- Garnish the tray with the coriander and tomatoes, if using, and serve.
Tip: It is best to add the pomegranate molasses at the end, after baking, to prevent it from burning.
