Okra with Pomegranate Molasses in the Oven

Green okra paired with stunning red pomegranate seeds make this recipe a perfect holiday side dish. The pomegranate molasses adds an unexpected depth of flavor to the roasted vegetables.

Ingredients

4 cups of fresh or frozen okra

4 unpeeled garlic cloves

1/4 cup olive oil

1/8 teaspoon seven spices

1/8 teaspoon salt

½ cup pomegranate molasses

1 cup pomegranate seeds

Optional: Coriander and cherry tomatoes for garnish

Instructions

  1. Preheat oven to 350.
  2. Put the okra in a tray with the garlic cloves, olive oil, salt, and spices.
  3. Bake in the oven for 10 minutes.
  4. Add the pomegranate molasses and pomegranate seeds, and mix.
  5. Garnish the tray with the coriander and tomatoes, if using, and serve.
    Tip: It is best to add the pomegranate molasses at the end, after baking, to prevent it from burning.
