Mediterranean Pita Pizza

Be creative in choosing vegetable toppings: red, orange, or yellow peppers, thinly sliced onions or carrots, sliced spinach (add it under the cheese), chopped artichoke hearts, or left-over veggies from last night’s dinner.

  • Calories: 310; Total Fat 10g; Saturated Fat 4g; Sodium 230mg; Carbohydrates 40g; Fiber 8g; Protein 16g.

Ingredients

4 small whole-grain pitas

1 cup tomato sauce

½ cup (4 ounces) shredded mozzarella cheese

4 cups sliced mixed vegetables

4 teaspoons extra-virgin olive oil

Instructions

  1. Heat the oven to 350°F. Arrange the pita rounds on a baking sheet (use two sheets if necessary).
  2. Using the back of a spoon, spread about ¼ cup of tomato sauce evenly on top of each pita.
  3. Top each pizza with some grated cheese. Arrange your choice of vegetables on top, then drizzle with olive oil.
  4. Bake for 15 to 20 minutes, or until the cheese is lightly browned.

Note: You can use a toaster oven to make one or two pizzas at a time if you don’t have a full oven.

    This was fantastic! Followed recipe with spinach, mushrooms and red bell peppers. I did sauté the peppers and mushrooms for a minute or two before popping in the oven. Crust was delicious and crisp even without the special pan. Yum!

    Delicious. Had to cook longer than 20 but I have a slow oven. Bell peppers, olives, fresh spinach, basil and fresh mozzarella. Will definitely make again

    AMAZING!! My toppings were cooked onions and mushrooms, chicken sausage, spinach, peppers, and shrimp. I slightly precooked the shrimp (with salt, pepper, and garlic) and added it in the last few minutes. I also added vegan cheese.

    These are delicious! Quick and easy to make. I used spinach mushrooms, jarred roasted red peppers and tomatoes.

    I haven’t tried it yet – anyone tried this and used olive oil and garlic instead of tomato sauce?

    Have not tried it yet, the basics look good, but I’ll add some good italian seasoning (sans salt)

    Totally surprised at how good this actually is. I expected it to be dry and tasteless. This will definitely be a staple in our diet.

      So glad you liked our easy pita pizzas. Friday night is pizza-and-Netflix night at our house, featuring pita pizzas. Get creative with your toppings and enjoy. (I go with mounds of veggies, and a little chicken sausage, while my husband augments his with tapenade.)
