Ingredients
2 medium cucumbers, diced
1 large tomato, diced
1 small red onion, diced
1 avocado, cubed
¼ teaspoon salt
2 ½ teaspoons apple cider vinegar
4 tablespoons balsamic vinegar
2 sprigs of watercress or cilantro, leaves and stems, chopped
Instructions
- In a medium bowl, combine the diced cucumbers, tomatoes, red onion, and avocado.
- In a small bowl, make the dressing by whisking together the salt, apple cider vinegar and balsamic vinegar.
- Drizzle the dressing over the cucumber mixture, add the chopped watercress, and toss to combine.
- Serve immediately or cover and chill until ready to serve.
