Wheat Bran Cranberry Quickbread

Not sure what to do with those frozen cranberries left over from the holidays? This quickbread is as tasty as it is easy to make — just mix, pour, and bake! The combination of cranberries and orange juice makes it a perfect bread to slice and eat for breakfast.

Ingredients

½ cup unbleached white flour

1 cup whole wheat flour

1 cup wheat bran

¾ cup brown sugar

1 tsp. baking powder

½ tsp. baking soda

½ tsp. sea salt

½ cup walnut pieces

1 cup cranberries

1 egg

½ cup milk

1 cup orange juice

⅓ cup oil

Instructions

  1. Preheat oven to 350°F.
  2.  In a large bowl, mix together the egg, milk, orange juice and oil. In a separate bowl, combine flours, bran, sugar, baking powder, baking soda, salt, walnuts and cranberries. Add dry mixture into wet and mix until just combined.
  3. Pour into a greased 9x5x3” loaf pan. Bake for 55-60 minutes, or until the bread is firm in the center. Cool in pan 10 minutes, remove to rack and cool before slicing.
