Tomato Salad El Alfama

This salad is quintessential Mediterranean Diet: simple, clean, fresh, healthy, and tasty. It takes almost no time at all to make, with just a few ingredients tossed with basil leaves, extra virgin olive oil, salt and pepper. A light dressing is the perfect way to celebrate these great Mediterranean flavors.

Ingredients

1 medium red onion

4 tomatoes

1 can tuna or mackerel

Basil leaves, torn (as many as you wish)

Juice of 1 lemon

Equal amount extra virgin olive oil (to match juice of 1 lemon) 

Salt and pepper to taste

2 tablespoons capers, preferably capers preserved in salt (optional)

Instructions

  1. Cut the onion into thin, half-moon slices.
  2. Chop the tomatoes, and flake the tuna.
  3. Combine the onions, tomatoes, and tuna  in a bowl with the torn basil leaves.  
  4. In a small bowl, juice the lemon and match the amount of olive oil to the amount of lemon juice.
  5. Toss the salad with the extra virgin olive oil, lemon juice, salt and pepper. Divide among four salad plates. Add capers if you choose.
