“Bacalhau a Bras” is a classic Portuguese dish made with potatoes and salt cod. This vegetarian version uses tofu instead.
1 large potato, cut into thin sticks
2 tablespoons extra-virgin olive oil
1 medium onion, sliced into thin rounds
1 clove garlic, minced
3 1/2 ounces grams smoked firm tofu, cut into strips
1 small pinch salt
1/2 teaspoon black pepper
2 eggs, lightly beaten
1/6 cup black olives, sliced
2 tablespoons parsley, chopped, for garnish
