Although this pairing is new to many Americans, sweet potatoes and peanuts are a delicious combination enjoyed across the globe, especially in African and Asian cuisines.
4 sweet potatoes
1 can chickpeas, rinsed and drained
2 teaspoons olive oil
¼ teaspoon paprika
¼ teaspoon chili powder
½ cup cilantro, chopped (or Thai basil)
½ cup natural peanut butter
2 Tablespoons low sodium soy sauce
3 Tablespoons rice vinegar
2 Tablespoons honey
2 teaspoons freshly grated ginger
1 large clove of garlic, minced
¼ cup of water
