There are dozens of ways to make this traditional Turkish sauce, which is delicious on roasted vegetables, falafel, fish, and meats. Some versions use blanched almonds or other nuts. Tahini, a paste made from sesame seeds, is easy to find in major supermarkets and Mediterranean grocery stores, and refrigerated, it keeps for a long time.
1 cup tahini
2 crushed garlic cloves
⅓ cup lemon juice
Salt
¼ cup water
Combine the tahini, garlic, and lemon juice in a blender and mix until smooth. Season with salt to taste, and slowly add the water to thin.
