This pie has no crust, so it’s quick and healthy. Mix it by hand with a large spoon, so the apples don’t get crushed.
1 egg
½ cup (115g) sugar
½ cup (60g) whole wheat flour (regular or pastry)
1 tsp baking powder
¼ tsp salt
½ tsp cinnamon
¼ tsp vanilla
3 small or 2 large apples, cored & chopped but not peeled
½ cup (75g) dried cranberries
1 cup (120g) chopped nuts (walnuts or pecans are good)

I have made this dessert 5 times now. This last time I made it GF. It is best to chop the apples a bit smaller. I have used 1 red pear and 3 apples to 1.5X the recipe. Fills a 10 inch pie dish perfectly!
