This garden-fresh, open-faced sandwich can be made using store-bought hummus and pickles, or it can be all your own with two homemade African heritage spreads. However you dress it, using thinly sliced, peppery radishes and lemony hummus as the “meat” of your sandwich is a healthy summer habit sure to delight!
1 slice of whole grain bread
radishes, washed, sliced into thin rounds
2 tablespoons of Butter Bean Hummus (or your choice of hummus)
1 tablespoon Cucumber Sambal (or your choice of pickles)
1 large leaf of lettuce (red leaf lettuce here)
Pinch of sea salt
On a slice of whole grain bread, layer the radish, hummus, cucumbers, and lettuce, in that order. Sprinkle a touch of salt over the radishes. Enjoy with a tall glass of water or fresh squeezed lemonade!
