Shakshuka is a traditionally a North African dish, where eggs are cooked in a flavorful tomato sauce and topped with fresh herbs. This version has a Southwestern twist, featuring black beans and fresh cilantro. Try it for breakfast, lunch, or dinner.
1 tablespoon olive oil
1 onion, chopped
1 red bell pepper, chopped
3 cloves garlic, minced
1 tablespoon cumin
1 ½ tablespoons paprika
1 (28-ounce) can no-salt-added diced tomatoes
Salt and pepper, to taste
1 cup chopped cilantro, divided
4 eggs
1 cup cooked black beans (canned no-salt-added, or leftover cooked)
½ cup crumbled feta cheese
