Ingredients

2 large oranges, zest only, sliced into thin strips

1 ½ cups water

1 cup honey

2 ¾ cup whole wheat flour

4 teaspoons baking powder

1 teaspoon sea salt

1 cup low fat milk

¾ cup chopped walnuts, dredged in 1 teaspoon flour

Instructions

  1. Preheat oven to 350°F.
  2. Place the orange zest and water in saucepan and simmer over low heat for about 30 minutes or until peel is tender. Pour off all but ¼ cup of water and add the honey to the orange liquid and peel. Boil the mixture over low heat for about 15 minutes. Cool slightly. The syrup should thicken.
  3. Sift flour, baking powder and salt into a medium mixing bowl. Combine the milk with the orange syrup and add to dry ingredients. Mix well. Add the nuts. Pour the batter into a loaf pan, greased and lined with parchment paper.
  4. Bake for 45 minutes or until lightly browned and firm at the center.
