This heart healthy and protein-packed Mediterranean salad is simple, delicious, and filled with healthy ingredients including grains, vegetables and peanuts.
3 tablespoons peanut oil
2 garlic cloves, minced
1/2 teaspoon hot pepper flakes
1/2 red bell pepper, diced
1 yellow squash, diced
8 ounces snap peas
2 cups lentils, pre-cooked
1 cup whole grain rice
1 piece of ginger, grated
1 cup plain peanuts, roasted
1 bunch green onions
Salt (optional)
Lime (optional)
Cilantro, to garnish
