Grilled Shrimp with EVOO Marinade

The combination of fresh herbs, fresh lime juice,  and heart-healthy olive oil makes a delicious and healthy way to marinade shrimp! Throw your marinated shrimp on the grill and eat over a salad, or with your favorite whole grain and  grilled veggies.

Ingredients

2 tablespoons minced garlic

Mix of chopped fresh herbs such as dill, basic, parsley, mint or oregano

2 jalapeno peppers (optional)

Salt (to taste)

1/4 cup of extra virgin olive oil

2 pounds raw shrimp

Lime juice (of 1 lime)

1 bunch of cilantro

Instructions

  1. In a food processor or blender, blend the herbs and jalapeno (except the cilantro) with salt and extra virgin olive oil
  2. Marinate the shrimp for 1 hour in the herb mixture
  3. Skewer the shrimp. Arrange over grill over a medium flame.
  4. Cook 5-7 minutes until the outside of the shrimp turns pink and the inside is white and opaque. Don’t overcook!
  5. Sprinkle the cooked shrimp with lime juice and minced cilantro.
