Salad
1 bag (14 ounces) of artichoke hearts (fresh or frozen)
½ cup of fresh orange juice
1 bunch of lettuce and spinach or Rocca
Zest of one orange
Zest of one lemon
Dressing
1 teaspoon of mustard
10 tablespoons of extra virgin olive oil
Juice of ½ a lemon
Juice of ½ an orange
Salt and white pepper to taste
For decoration
Walnuts and dried lemon or orange slices
Feta or Bulgarian cheese
