Ingredients
1 medium carrot, peeled, boiled and puréed, or 2 tablespoons canned unsweeted puréed pumpkin
1 heaping tablespoon tahini (sesame paste)
2 tablespoons Greek yogurt
2 tablespoons honey, plus more for garnish
zest of ½ an orange
4 Mediterra sesame energy bars with orange and honey
1 large orange, cut into 8 wedges
Cinnamon for garnish
Fresh mint leaves for garnish
Instructions
- Place the puréed carrot (or pumpkin) in a food processor together with the tahini, yogurt, honey, and orange zest. Purée until a smooth cream forms.
- Place each sesame honey bar, one at a time, on a piece of parchment paper on a clean work surface. Cover with another piece of parchment and roll out each bar using a rolling pin until it is about as thin as a quarter.
- Fill each of the flattened bars with a tablespoon of the puree and roll up to form a cylinder. Optional: Cut into sushi-sized pieces, about 1-inch long.
- Serve with orange slices, a light drizzle of honey, cinnamon, and fresh mint leaves.
