What You’ll Love about Your Week in Croatia

First of all, you will love Croatia. Secondly, (for most people) it will probably be the first time you’ve traveled in Croatia and experienced its history, culture, food and wine — and it is always wonderful to learn new things and have new adventures.

Dubrovnik and Split are charming, with beautiful architecture, winding streets, all within view of the Adriatic Sea. We’ve chosen other places and people to visit that round out a start at understanding the foodways and culture of this beautiful country, and that will give you (at least) one of those pinch-me days – when you know you are so lucky to be where you are.

We hope you will join us for another, in the words of Oldways founder Dun Gifford, Oldways trip of a lifetime!

Day by Day

Day 1

Sunday, October 17

Check in at the seaside Ambasador Hotel in Split, unpack and walk along the water, stopping by one of the many cafes for a coffee or a cocktail.

We’ll get together for an early evening welcome meeting at the hotel, where you’ll have a chance to meet your fellow travelers. We’ll also enjoy a wine tasting before we have our welcome dinner at the Ambasador.

Day 2

Monday, October 18

Today we start with a tour of the Green Market. Afterwards, we will walk to Split Cooking Class for a hands-on cooking class and lunch. On our walk home, we will have a guided tour of Split’s historic center including Diocletian’s Palace.

Day 3

Tuesday, October 19

We’ll be on the water today! We’ll take a ferry to the island of Brač, where we’ll visit an Olive Oil Museum for a tour and a tasting, followed by a stop at the incredible Vidova Gora viewpoint and a visit to the Jaksic Gallery featuring stone sculptures. We’ll finish with a local lunch and a return to Split by ferry. You’ll be free for dinner in Split.

Day 4

Wednesday, October 20

We’ll check out of the Hotel Ambasador and drive up into the mountains for a very special demonstration of Soparnik, a UNESCO protected dish, with a light lunch featuring Dalmatian Prosciutto. We’ll drive south to Dubrovnik and the spectacular Bellevue Hotel. After checking in, we’ll walk into Old Dubrovnik for a walking food tour/dinner.

Day 5

Thursday, October 21

Today is an island exploration. We’ll take a private boat to the Elafiti Islands, stopping at local producers for tastings and a light lunch. A relaxed, scenic way to explore the islands’ food traditions.

Day 6

Friday, October 22

Today we’ll drive to Mali Ston for a special Oyster Experience. We’ll enjoy oysters fresh out of the water and a traditional mussels stew along with local beverages like Rakija in a floating restaurant. Our day will conclude with a wine tasting.

Day 7

Saturday, October 23

For our last day, we will head to Konavle, the region south of Dubrovnik rich in history, art, and cuisine. We will visit a goat cheese farm, followed by a visit to learn about Peka, a traditional Croatian dish which literally translates to “cooking under the lid.” There we will enjoy lunch with regional wines and folklore musical entertainment. After free time in the afternoon, we will gather at the Bellevue for a final aperitivo and tasting of tuna pâté.

We will have the pleasure of collaborating with local chefs in Croatia – friends that we have met while planning the Culinaria. We’ll be working with local guides, and you will have the team of two Saras – Baer-Sinnott and Fetbroth – to make sure your week in Croatia is perfect.

Sara Baer-Sinnott is president of Oldways, a nonprofit food and nutrition organization, helping people live healthier, happier lives through cultural food traditions and lifestyles. Since 1992, her work at Oldways has focused on developing ground-breaking programs, including its Traditional Diet Pyramids, African Heritage & Health, the Whole Grains Council, Culinary Travel and many others. Sara is also co-author of The Oldways Table with Oldways’ founder K. Dun Gifford. Before joining Oldways, Sara was the Special Projects Editor at Inc. Magazine, and she’s also worked for state and federal government agencies. She has a B.A. in Economics from Hobart and William Smith Colleges, and an M.A. in Regional Planning from the University of Massachusetts Amherst.

Sara Fetbroth is a hospitality consultant who specializes in restaurant operations, leadership coaching, hospitality, and culinary tourism. She graduated from Cornell University with a
degree in Hotel Administration and has 20+ years of experience in the restaurant industry,
most notably as the General Manager of Oleana Restaurant. As an assistant to Oldways in Culinaria management for almost 10 years, she works with Oldways to connect more people through culinary experiences and heritage diets around the globe.

Prices are based on rates of exchange, taxes, and other costs as of the tour publication date. We reserve the right to correct errors and changes, and to increase program prices to cover increased costs, tariffs, and taxes received after prices are published and to reflect currency fluctuations.

A note about the Single supplement: Because the charges for a double room and a single room at the Ambasador and Bellevue are almost the same, it means that the cost of a single room is much higher than sharing the cost of a double room. This is a charge from the hotel and is not something we can change.

All surplus funds generated by this educational Culinaria will be used to increase community access to heritage diet resources and African Heritage, Latin American Heritage, and Mediterranean curricula to help reduce health disparities through heritage diets.
